Soory that I am such a plappermouth today, but I am really pleased by your blog and have so many comments in mind.
One of the most difficult tasks for me as a farang is, to compose the right menu. We often cook Thai food, and try to do it in the same way as you do in Thailand, but I am not so good in choosing the right dishes which cover sweet, salty, spicy, sour and spicy. May be you can give a little lecture about that?

The trick is adding only small amount of seasoning at a time and taste it until you think it is right. This is another reason why I spent more than 2 hours of cooking Thai food :p hehe
After a while, you will know how much is right for each recipes without measuring fish sauce or lemon juice.
Most of spicy and sour recipes, we would say let the sour leads and other tastes follow. Cut the sour taste with fish sauce and sugar and the spiciness can always be added more or less, depend on the level you like.
Only half of teaspoon of sugar will not intend to make the food taste sweet but we add it to make the food well balance of 5 tastes.
